Sesame seeds

The people of Asia and the Eastern Mediterranean have benefited from cultivating and using this versatile plant for at least 6000 years.

Beside its main quality as an antioxidant (rich in selenium, vitamin E, calcium and zinc), fortifying the body to fight against carcinogens, sesame seeds are an important source of essential fats. Nowadays the weight-conscious might be tempted to leave them out of their diet but this is to their own loss and also that of their children. Essential fats strengthen the membranes of the nerve cells and make prostaglandins, hormone-like substances that affect brain function — children who eat sesame seeds learn faster and perform better at school. As the aroma and taste of sesame seeds are mild and nutlike, why not put them on breakfast cereals or in soups? Raw sesame seeds are most nutritious because the heat of cooking damages their essential fats.

Sesamum indicum has been cultivated since antiquity by Asians, Africans, Greeks and the Romans for its seeds not only to eat but also to extract a rich and highly nutritious oil. In Europe and the USA sesame seeds are used to flavour and garnish foods, such as breads and cakes, but in the cuisines of the Middle East and Asian world they form the main ingredient of special dishes and dips such as Tahini. In Greece, there is a delicious desert made of crushed and sweetened sesame seeds, Halva, which has such a high nutritional value that it is primarily consumed during Lent to fortify people who are fasting. The Romans, on the other hand, used to ground sesame seeds with cumin to produce a special pasty spread for bread.
