Cacao Ice-Cream
Ingredients:
1 can sweetened condensed milk
25 g of cacao nibs
475ml heavy whipping cream
235ml light cream
15ml vanilla extract
Method:
In saucepan, stir together sweetened condensed milk and cacao nibs. Cook over low heat, stirring constantly, until mixture is smooth and slightly thickened, about 10 minutes. Remove from heat; cool slightly.
Gradually add whipping cream, light cream and vanilla, beating with whisk until well blended; refrigerate until cold.
Place in ice cream freezer container. Freeze according to manufacturer's instructions.
Enjoy!
Cacao Smoothie
Ingredients:
2 bananas
2 tablespoons of cacao nibs
200ml of milk, rice milk or soya milk (or anything you may prefer)
Method:
Blend until smooth.

Cacao, Fruit & Nut Smoothie
* You will need a blender for this recipe
Ingredients (2 servings):
1tsp cacao nibs
80g chopped dates
a sprinkle of cashew nuts
a sprinkle of walnut nuts
2 bananas
100 ml filtered water
Method:
Soak the nuts and the dates for at least 3 hours.
Strain and place in to blender along with the rest of the ingredients.
Blend until smooth and pour into 2 glasses.

Raw Chocolate Mousse
A favourite of ours, you will need a food processor or blender to prepare this delight.
Ingredients:
100g dry apricots
4 tsp cacao nibs
150g fresh fruits (banana mango, peach or grape work well but avoid anything citrus)
1 tsp maca powder
Method:
Soak the apricots and nibs in half a bowl of water for 8-12 hours.
Place all the ingredients in the processor/blender until the mixture is smooth and gooey.
Spoon into bowls. Leave in the fridge for at least 1/2 hour until the mousse has set.
You can garnish with a sprig of fresh mint, red berry sauce and cacao nibs. A delicious and healthy way to finish any meal!
